Avocado, Chicken, Walnut Salad

This simpy and tasty salad can be put together in a few minutes using some leftover chicken. Perfect if you want to eat healthy, but don’t have a lot of time to prepare your lunch.

Avocado, Chicken Walnut Salad

Ingredients
  • 1 (smoked, poached or BBQ'd) chicken breast (sliced)
  • 2 large handfuls lettuce leaves (chopped)
  • 1 small-medium avocado (sliced)
  • 2 eggs (boiled and halved)
  • 1 handful walnuts (chopped)
  • 2 tbsp. flaxseed oil

  • 2 large handfuls lettuce leaves (chopped)
  • 1 small-medium avocado (sliced)
  • 2 eggs (boiled and halved)
  • 1 handful walnuts (chopped)
  • 2 tbsp. flaxseed oil
Instructions
  1. Divide lettuce evenly across two plates
  2. Put on the sliced chicken breat, sliced avocado and walnuts
  3. Before serving add the egg and drizzle with flaxseed oil
  4. Enjoy!
