This simpy and tasty salad can be put together in a few minutes using some leftover chicken. Perfect if you want to eat healthy, but don’t have a lot of time to prepare your lunch.

Avocado, Chicken Walnut Salad
Ingredients
- 1 (smoked, poached or BBQ'd) chicken breast (sliced)
- 2 large handfuls lettuce leaves (chopped)
- 1 small-medium avocado (sliced)
- 2 eggs (boiled and halved)
- 1 handful walnuts (chopped)
- 2 tbsp. flaxseed oil
Ingredients

- 1 handful walnuts (chopped)

Instructions
Divide lettuce evenly across two plates
Put on the sliced chicken breat, sliced avocado and walnuts
Before serving add the egg and drizzle with flaxseed oil
