This quick, healthy, filling and appetizing scramble is perfect if you love to get off on a healthy start in the morning.

Adrenal Fatigue Veggie Scramble
Ingredients
- 1/2 cup green vegetables (chopped) (I like broccoli, zucchini and asparagus)
- 2 cups fresh spinach
- 6 eggs (beaten)
- 1-2 tsp. coconut oil
- real salt and fresh ground black pepper to taste

Instructions
Grab a large skillet and melt the coconut oil over medium heat. Add the green vegetables and spinach and stir for about 2 minutes until the spinach is wilted and the vegetables are crisp-tender.
Pour the eggs in the pan and scramble for another 3-4 minutes. Remove from heat and salt and pepper to your liking.
For a gut-boosting effect, top your scramble with 1/4 chopped avocado and/or fermented sauerkraut!
