This is one of my favorite recipes by far! A very tasty breakfast recipe using coconut flour and fresh blueberries. These pancakes are easy as delicious and they provide everything you need to start the day.
If this is your first time making coconut pancakes please note that you won’t be able to see bubbles forming as much as you would with regular wheat flour. You can use a spatula or fork to slowly lift your pancakes before flipping, just to be sure that the underside is nicely browned.

Grain Free Coconut Flour Blueberry Pancakes
Ingredients
- 5 medium eggs
- 1/2 cup coconut flour
- 1 cup applesauce (home made, or fresh raw applesauce)
- 1 tsp. baking soda
- 1/4 cup butter or coconut oil
- 1 tsp. vanilla
- fresh blueberries to tase

Instructions
Mix all ingredients except any add-ins with blender or whisk and let it sit 5 for minutes to thicken
Heat large skillet or pancake griddle with butter or coconut oil

Use a 1/4 cup measure to spoon pancakes onto the cooking surface
Cook for about 2-3 minutes per side and is easy to flip. Coconut pancakes do take slightly longer than "regular" pancakes, so don't rush them!
Top with butter (it makes everything tastier!) and enjoy!
