Ingredients
  • 1/2cup green vegetables (chopped)(I like broccoli, zucchini and asparagus)
  • 2cups fresh spinach
  • 6 eggs (beaten)
  • 1-2tsp. coconut oil
  • real salt and fresh ground black pepper to taste
Instructions
  1. Grab a large skillet and melt the coconut oil over medium heat. Add the green vegetables and spinach and stir for about 2 minutes until the spinach is wilted and the vegetables are crisp-tender.
  2. Pour the eggs in the pan and scramble for another 3-4 minutes. Remove from heat and salt and pepper to your liking.
  3. For a gut-boosting effect, top your scramble with 1/4 chopped avocado and/or fermented sauerkraut!
  4. Enjoy!
